Light Four Candles
Four Short Recipes for Chanukah
on the Fourth Night
Tonight is the foruth night of Chanukah. We light four candles
and say two Blessings on this night. First we light the server
candle "The Shamis Candle" in the center to use as
a lighter for our fourth, third,
second and first candles on the right. We light the fourth candle
first then the third, then the second and then we light the first
candle on the far right last.
First Blessing over the lighting of the
candle...
Blessed are you O L-rd our G-d, King of the universe, who has
sanctified us through His commandments and commanded us to kindle
the Chanukah lights.
Second Blessing in remerance of the miracles...
Blessed are you O L-rd our G-d, King of the universe, who brought
miracles for our ancestors, in those days at this time {of year}.
Potato Latkes
2 pounds potatoes, grated
1 medium onion, very finely chopped
2 eggs
3 tablespoons flour
1 1/2 teaspoons salt
1/2 teaspoon baking powder
1/2 teaspoon pepper
Vegetable oil, for frying
Soak grated potatoes in the water 10 minutes;
drain and squeeze dry in a kitchen towel. In large bowl combine
all ingredients except oil; mix thoroughly. Pour oil into large
skillet to a depth of 1/8 inch; place over medium heat. For each
pancake, portion 1/2 cup potato mixture into pan; flatten slightly.
Cook about 8 minutes until crispy and brown, turning once. Repeat
with more oil and remaining potato mixture.

Chanukah Nut
Cake with Honey Syrup
This quick and easy cake is a special holiday
cake from the Turkish Jewish tradition. Make extra cakes and
share them with your friends and family as gifts.
3 cups all-purpose flour
3 tablespoons sugar
teaspoon ground cloves
teaspoon ground cinnamon
2 cups finely chopped walnuts
1 cup dried dates, minced
1 cup vegetable oil
1 cup water
Mix all dry ingredients on a board using your
hands, rubbing and sifting them until well mixed. Make a mound
and put a hole in the center. Pour oil and water in center and
make into dough. Knead the dough for about one minute. (Alternatively
you can do this in a bowl, if you must) Place the dough in a
greased (use oil) 9 inch pan. Bake in a pre-heated oven at 350degrees
for one hour. Remove and allow to cool.
Chanukah Chocolate Mousse
4 ounces chocolate (milk, semi-sweet or sweet)
4 eggs, separated
1 cup margarine
whipped topping
Melt chocolate in microwave. Add egg yolks and margarine. Mixing
with fork, cook over low heat until thick or cook in double boiler
over rapidly boiling water, stirring until mixture
becomes thick. Set aside to cool. Beat egg whites until stiff.
Fold into chocolate mixture. Put into serving dishes and refrigerate.
Top with whipped cream and serve.

Chanukah Stew
4 pounds stew meat
4-6 tablespoons oil
1 cup sliced onions
8 ounces tomato sauce
1 cup red wine
1 cup margarine
4 carrots, sliced
2 cloves garlic, minced
salt and pepper
Brown meat in oil. Add margarine. Remove meat
to dutch oven. Brown onions and carrots; set aside. Cook tomato
sauce in remaining margarine and pour to meat. Add garlic, salt
and pepper. Bring to a boil, and reduce heat to a simmer. Cook
one hour. Add wine, and cook an additional 20 minutes.
